My Favorite Chcolate Chip Recipe

These Chocolate Chip cookies will have you wanting more. They will need milk or even better Vanilla ice cream. I make these once a week for my roommates they devour them.

Ingredients:
1 cup butter softened
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
2 teaspoon hot water
1/2 teaspoon salt
1 bag chocolate chips ( I use chocolate chunks)
Cream butter ,sugar,brown sugar, and add eggs one at a time. Stir in vanilla. Dissolve baking soda in hot water add to batter with salt, stir in flour. Bake 10-15 until golden brown and gooy.

Fresh Chili De Arbol Salsa

I made this Salsa for a Fourth of July party and got the recipe from my aunt!! Its tasty and you can adjust the heat with Jalapenos!! It comes out soo good! You will make this one a lot!! I store big batches and use it for everything, and the roasted flavor of the ingredients is heavenly.

Ingredients :

9-12 dry chili de arbol
1 white onion
1/2 - 1 cup cilantro (use as much as you would like)
1 tomato
1/2 cup chicken or vegetable broth
1/4 teaspoon salt
shake of pepper
1 jalapeno (optional)
2-4 cloves of garlic (I love garlic)
Blender to blend or a food processor

Take the chili de arbol, white onion,garlic, jalapeno and tomato and roast until all the ingredients have a slight black look to them 5-15 minutes. Take the chili de arbol and blanch in boiling water for a few minutes about 5. Take the ingredients onion,garlic,tomato, chile de arbol, and jalapeno, and add the cilantro and chop or put into food processor with 1/2 cup chicken broth salt and pepper. Blend or puree till smooth. Enjoy with chips.

Chocolate Chip Cake






I made this cake with a twist, as I was playing with different ingredients but it was yummy!!! Enjoy!

Chocolate Chip Cake:
2 Cups All purpose four
1 cup Agave Nectar ( you may use sugar 1 1/2 cups)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1 cut Almond milk or ( 1 cup low fat milk)
1 teaspoon vanilla
2 eggs
2 squares unsweetened chocolate, melted
2 1/2 cups organic or semi sweet chocolates

Combine dry ingredients in mixer. Add shortening milk,and vanilla mix and scrape bowl till smooth. Add eggs and chocolate and mix well. Add the chocolate chips last and stir into batter. Pour batter into two greased and floured 8 or 9 inch pans. Bake at 350F for 30 to 25 minutes. Cool for 10 min before frosting.

Chocolate Butter creme Frosting :
1/3 cup butter or margarine softened
1/4 cup whipping cream or evaporated milk
1 teaspoon vanilla
4 cups powdered sugar
1/3 cup cocoa
1/4 teaspoon salt

Mix 1/3 cup cocoa with powdered sugar in a bowl. Add soften butter,vanilla,cream,and salt beat until smooth. Add i cup of powdered sugar at a time until blended. Add milk a teaspoon at a time for a minute. Keep cold :)Frost cake and add whatever you want to!!!

Macy's Recipe Winner: Avocado Enchiladas



Early this year, I entered the Macy's Keeps It Cooking contest and made Avocado Enchiladas with Roasted Red Bell Peppers in a Chile Verde Sauce. As a runner up winner, I won $1,500 and spent the winnings on a Kitchen Aid Mixer. With this win, I'm now baking and exploring new recipes.
